The Beef Chart - Cuts in the UK and Brazil.


For 3 weeks I tried to study and clear up my doubts about the English cuts, because I am Brazilian and I love barbecue, which is fairer than memorizing the best cuts of meat comparing figures and location. Whenever I go to the market or butcher some questions arise, so I decided to design all the pieces manually (3 weeks). The black lines on the ox are the cuts as they do in Brazil and the red lines are the cuts that we find in England (I also believe in the USA).



Durante 3 semanas procurei estudar e tirar minhas dúvidas sobre os cortes ingleses, como sou Brasileiro e gosto bastante de um churrasco nada mais justo que memorizar os melhores cortes de carnes via figuras comparativas. Sempre que vou ao mercado ou açougue surgem algumas dúvidas, por isso resolvi desenhar manualmente todas a peças. Os traços pretos no boi sao os cortes como fazem no Brasil e as linhas vermelhas sao os cortes que encontramos na inglaterra (acredito também nos EUA).
